  Precautions for refrigeration in lamb cold storage

Lamb meat should be refrigerated at low temperatures in a cold storage, which is the most practical method for storing lamb meat and lamb meat products. Under low temperature conditions, especially when the temperature is below minus 10 ℃, the water in lamb turns into ice, preventing bacteria from growing. But when the lamb is thawed and restored, the increase in temperature causes the leakage of meat juice, and bacteria begin to grow and reproduce again. So, storing lamb must be kept at a certain low temperature, otherwise the quality of lamb cannot be guaranteed.

  Steps to refrigerate lamb in lamb cold storage

1. Cooling lamb: Before placing the lamb in the cold storage, the temperature should be lowered to around -4 ℃. After the lamb is stored, the temperature should be maintained between -1 ℃ and 0 ℃.

1. To quickly and deeply freeze lamb, it is usually placed in a -40 ℃ freezer to lower the temperature to below -18 ℃. Frozen lamb is more resistant to storage, and the lower the temperature, the longer the storage time.

2. The cooling and freezing of lamb meat are carried out under hanging conditions, occupying a large storage space. For long-term storage, frozen lamb can be moved to a refrigerated warehouse and stacked for storage.

3. After the lamb is stored, the temperature should be maintained between -1 ℃ and 0 ℃.

4. Lamb cold storage should be cleaned and disinfected before storing products, and should not be stored together with different types of products to avoid cross contamination.
